In the difficult post-war years of Greece, the young Dimitris Dimou was driven by an unquenchable thirst for knowledge and education. The harsh living conditions made him look beyond the borders of his country. He wanted to achieve progress and prosperity through solid training.

Saumonée Trout D. Dimou since 1966

Already in the early 1950s, the vision for our company began to take shape. In the difficult post-war years of Greece, the young Dimitris Dimou was driven by an unquenchable thirst for knowledge and education. The harsh living conditions made him look beyond the borders of his country. He wanted to achieve progress and prosperity through solid training.

 

In 1955, he received the opportunity to participate in a further education mission for young people from the region, organized by the Kopais Company (responsible for the drainage of Lake Kopais) in Denmark. He impressed with exceptional performance, received a scholarship from the Greek Ministry of Agriculture, and completed his studies at the renowned zootechnical school Tune Landboskole in Denmark – a country with a long tradition and deep expertise in freshwater fish farming.

After his return to Orchomenos in 1957, full of knowledge, visions, and ambitions, Dimitris Dimou strove to develop new and innovative business activities in his homeland. With foresight and deep respect for the natural environment, he acquired the property that his father Georgios had previously used for livestock farming. The unique landscape with its crystal-clear waters of the Springs of the Graces offered ideal conditions for raising salmonids. It was here that Dimitris Dimou recognized the perfect foundation to put his innovative ideas into practice in Greece's emerging aquaculture sector.

In 1966, after the completion of the facilities and three successful test rearings of fry under the supervision of the Ministry of Agriculture, one of the first modern organized trout farming facilities in the country was founded in Orchomenos (Boeotia). It was a milestone for the region. The facility followed Scandinavian standards, was fully vertically integrated, and covered the entire production chain: from egg incubation through rearing and processing (filleting and packaging) to the marketing of the end product – the famous smoked Saumonée trout fillets D. Dimou – on the Greek and international markets.

The technical infrastructure works and the beautification of the surrounding area were carried out with great respect for the natural environment and at the same time incorporated cosmopolitan influences from the long career of the owner Dimitrios Dimou as consular attaché of our country abroad. The once degraded and abandoned landscape thus transformed into a new, productive source of prosperity for the region.

Over time, significant investments were made to procure fish smoking ovens and mechanical equipment from abroad. To bring the smoking technique to the highest level, a Danish food technologist specializing exclusively in trout smoking was invited at the same time. This enabled a direct transfer of the know-how that our father had once acquired in Denmark.

 

As part of the advertising campaign – and because the Saumonée trout was still unknown to the broad consumer public at that time – aquariums with live Saumonée trout from Orchomenos D. Dimou were placed in selected delicatessen shops in the center of Athens. The aim was to present and promote the product.

The ambitious plans of the founder Dimitris Dimou developed step by step and began to bear fruit.

 

The exemplary operation of the company led to rapid growth, and the end product – the vacuum-packed smoked trout fillet Saumonée D. Dimou – became increasingly sought after and gained its own identity and international recognition over the years.

 

Among the distinguished customers of the company were the Presidency of the Hellenic Republic, renowned luxury hotels in Greece (Hilton, Grande Bretagne, Astir Vouliagmeni, Miramare Rhodes, Corfu Palace), as well as the catering of Olympic Airways. The Saumonée trout D. Dimou was also exported to demanding European markets (United Kingdom, Belgium, Switzerland, Luxembourg, Netherlands) and to Kuwait.

Thanks to the great positive response and the idyllic natural environment that our company actively highlights and protects, our facility became known to a wide audience. It is and remains a popular attraction and is visited by many people: from all over Greece, from all over Europe, by aquaculture and fish farming professionals, private individuals, school classes, and many others. It has developed into a real magnet for Greek and international tourists and is recommended in numerous travel guides as a significant tourist attraction.

Dimou presents a culinary experience at the Central Greece stand that tells a story and is internationally recognized. From the mythical Graces Springs in Orchomenos, the birthplace of the three Graces, goddesses of beauty and charm, our smoked trout continues its endless journey like the clear waters of the springs.

Our history is the story of a vision that took root at the springs of Orchomenos. Our father Dimitrios Dimou taught us that true success comes from knowledge, patience, and deep respect for nature. Today we carry on this legacy with the same pride and conviction.
